Cut baked sweet potatoes into chunks; mash with a fork together with 1 tablespoon of sour cream (optional ), 1 tablespoon brown sugar, a pinch of cinnamon, and a sprinkle of chopped pecans.

Mix grated sweet potatoes (about 1 cup) with one large egg, 1 tablespoon flour, 2 tablespoons chopped pecans or walnuts; add salt and pepper to taste. Drop by spoonfuls onto a pan sprayed with cooking spray; fry until browned on both sides. Serve with sour cream mixed with chives and horseradish (optional).

Wash 1 pound of whole sweet potatoes; then cut them into 2-inch chunks. Boil in enough water to cover for 15 minutes or until tender when pierced with a fork. Drain and serve with salt, pepper, butter, or olive oil (optional).

Combine 2 cups mashed orange yam (sweet potato), 1/2 cup margarine or butter, 1 cup white sugar, 2 teaspoons vanilla extract, 4 eggs (beaten), 3 cups self-rising flour, and 2/3 cup evaporated milk. Pour batter into a greased Bundt pan; bake at 350F degrees for about one hour.
