Chocolate Chip Muffin Recipe (With Eggs)
These bakery-style chocolate chip muffins have the perfect flavor and texture. These muffins are loaded with choco chips and have the spiced flavor of cinnamon and nutmeg. Top the muffins with coarse sugar or something like chocolate sauce.
1 Tsp. cinnamon powder
3 cups all-purpose flour
1/3 cup melted unsalted butter
3 Tsp. baking powder
1/2 Tsp. salt
1/3 cup yogurt
1/8 Tsp. nutmeg powder
1 cup milk
1/3 cup oil
1/4 Tsp. baking soda
1 cup or more of chocolate chips
1 cup granulated sugar
1 1/2 Tsp. vanilla essence
Chocolate sauce or sugar for garnishing
Preheat the oven to 218°C and grease a muffin pan with nonstick spray. Whisk the flour with other dry ingredients except for chocolate chips in a shallow bowl and set aside. Now take the milk and butter (at room temperature) and combine them with eggs, oil, sour cream, and vanilla in another bowl. Combine the mixture of two bowls entirely such that there are no lumps in the end. Add the chocolate chips and then divide the batter among the muffin molds. Bake for 4-5 minutes and then reduce the temperature to 177°C. Again bake for 24-25 minutes until muffins are golden from the top. Cool the muffins and then take them out. Garnish the muffins with chocolate sauce or coarse sugar before serving.
Chocolate Chip Muffin Recipe (Eggless)
This eggless chocolate chip muffin recipe creates muffins that have the same chocolaty taste as bakery-style muffins. Add a bit of coffee powder along with cocoa for an exceptional flavor.
12 oz. all-purpose flour
1/2 Tsp. pure vanilla
1 Tsp. coffee powder
1/3 cup vegetable oil
1/2 cup chocolate chips
1 cup sugar
1/2 Tbsp. unflavored white vinegar
1/2 Tsp. baking powder
3 Tbsp. cocoa
1/2 Tsp. baking soda
1/2 cup dairy milk
In a bowl, combine sugar, vegetable oil, vanilla, and milk. Sieve flour, soda, baking powder, cocoa, and coffee in another bowl. Incorporate the dry items into the bowl of wet ingredients. Mix well to make a smooth muffin batter. At this point, add the vinegar and leave the batter aside for 3-4 minutes. Meanwhile, preheat your oven at 356°F for 8 minutes and line a muffin tray with muffin liners. Fill the tray with the batter and top with chocolate chips. Bake the chocolaty muffins for 25-26 minutes. Take the muffins out of the oven and allow them to cool before serving.
Important Points To Consider
Always take unflavored vinegar that won’t alter the taste of muffins.
You can use sour cream rather than yogurt. The purpose of cream or yogurt is to keep the muffins creamy and moist.
Don’t over mix the muffin batter if you want soft and fluffy muffins. Moreover, the batter should be slightly thick so it can hold the chocolate chips.
Vegans can make the chocolate chip muffin recipe with soy milk and vegan chocolate chips. Do add apple cider vinegar in place of eggs.
Feel free to add a cup of fresh blueberries to the batter for some fruity taste.
Store the muffins by covering them with a clean towel and placing them on a cooling rack.
