The Details

A close up of many different types of food

I will use whole wheat flour, and the tastes that it adds to the baked goods are just exceptional. If you guys have never used whole wheat flour in baked products, then these cookies are the best to start with.

Generally, the combination used is light brown sugar and caster sugar, but I have tried something new, which is jaggery powder (also known as Shakkar). If jaggery powder is out of stock, you can also use coconut sugar, readily available at the nearest grocery stores.

I added some cornflower in the dry ingredients of the batter as it adds excellent chewing to the cookie.

I have not used butter, and pure ghee has been used, and it provided perfect shape and a great texture to the cookie.

Here is the proper recipe for the cookie

A piece of chocolate cake on a plate

* 1/2 cup ghee

* 1/2 cup jaggery powder(shakkar) / coconut powder

* 1 teaspoon vanilla extract

* 1 cup whole wheat flour

* 1/2 teaspoon baking soda

* A pinch of salt

* 1/4 cup cocoa powder

* I tablespoon cornflour

* 1/4 cup milk

* 1/2 cup chocolate chips

* Sea salt for dressing.

1. Take a bowl, add ghee and jaggery powder, mix them well till the mixture becomes light and fluffy.

2. Now add vanilla extract and mix all three things

3. Now add dry ingredients like cocoa powder, whole wheat flour, baking soda, cornflour and mix it well till it gets a coarse consistency

4. Now add some milk and combine everything

5. When the cookie dough is ready, let it rest in the refrigerator for 15-20 minutes

6. While the cookie dough is resting, preheat the oven at 180-degree celsius

7. Once the dough is rested, use a medium-sized ice cream scoop to take out even sized portions of cookie dough

8. Now, place them on the baking sheet of your baking tray

9. Now, press the dough balls and top them with chocolate chips

10. Bake the cookies for around 12-16 minutes at 180-degree Celsius and when baked, just let them cool
