Cookies may be the most beloved dessert in the world, but making them takes a lot of hard work and a little bit of talent. Anyone can bake a perfect cookie, but it takes talent and an understanding of the process that goes into producing a great cookie.

Put the edges of the cookie dough in between the forks and pull them taut, then place them on a cooling rack to cool completely. Baking with the dough chilled also ensures that your cookies will have a better crust. When they are fresh out of the oven, they have that “chewy” texture, but when they’re cool, they have that crisp flavor.
When your cookies are still warm, it’s easier to get the corners to brown evenly. This is just an added bonus. Shortbread cookies are also much easier to frost than other cookie dough.
